Home Made Peanut Brittle Gone Wrong

Over the Weekend I thought it would be fun to make some Christmas treats with the kids.  So I looked through my recipe book and decided to make Peanut Brittle.  It looked easy.  I wish I knew what stress was waiting for me before I started.  The recipe is from Karo Syrup and I have added the link  for Microwave Peanut Brittle if any one wants to try it.  Perhaps you'll have better luck. 

So the first thing that went wrong was... I read the recipe wrong.  The first batch was trashed, and my poor kids were so disappointed.  The second batch was overcooked, except it would not have mattered because I ruined it by my self. I placed wax paper over it to try and spread the peanut brittle thinner.  Who knew the paper would stick and not come off.  Hugh!!!!! Then the third batch came out perfect! I thought to my self "I finally got the knack". Why not try one more batch?  (NO. somebody should have stopped me).  I burnt the heck out the last batch.  The syrup looked like it was not cooking no mater how long I cooked it.  I was so wrong.  I don't usually have so much trouble while cooking but this was so frustrating that I have to laugh at myself.

  2. Don't feel that you are the only one who has been unsuccessful with microwave peanut brittle. The first couple of tries were fine, then each time I tried to make it, I burnt it. It is very addictive when the batch does come out right though!

    27 years ago, before we were married, my husband asked me to make some and the only recipe I had was one requiring the stove top and a candy thermometer. It worked but was a bit sticky. He ate it anyway and pulled off a crown. It cost him a few bucks to have it replaced! Why he still married me after that is unexplainable, LOL!
