Spinach Quiche





Quiche is a comfort food to me, I love it any time.  This recipe is one that I make when I have some of my friends over for brunch; it always gets compliments.  It will be gone so fast you will want to make two at a time.

You will need:

1 cup shredded cheddar cheese
1 unbaked pastry shell, 9 inch  (I like Pillsbury frozen pie shell)
1 cup diced chicken ( you can use ham too but I like it with chicken)
1 package of frozen chopped spinach, thawed and squeezed dry
1/4 cup finely chopped onion
2 eggs
3/4 cup milk
3/4 cup mayonnaise (note: you should not substitute fat free mayonnaise it will not come out as well)
1/4 tsp. salt and a dash of pepper

Pre heat you oven to 350' (tip: place a cookie sheet in the oven while heating up the oven, when you are ready to bake put the pie on the hot cookie sheet this will help the bottom crust to cook better, you will not have a soggy crust). 
In a bowl combine chicken, onion, spinach, and cheese.
In a separate bowl combine eggs, milk, mayonnaise, salt and pepper.  Mix egg and chicken mixture together.
(tip: always do an egg wash over your pie crust before you put your mixture in the shell.  This will help your crust to have a nice golden shine and be flaky. An egg wash is when you take the egg white mix it up a bit and paint a layer over the crust and shell.)



Now you can pour the mixture in the pie shell and bake for 40 to 45 minutes or until a knife inserted near the center comes out clean, let it stand for 10 minutes before serving.
